This blue butterfly tea is known around the world under various names, such as anchan tea, colour change tea, blue tea, Thai blue tea and blue chai (India).

This colour can be changed by adding different ingredients. A deep blue tea turns purple when lemon juice is added, and the more lemon juice is added, the more intense the purple colour becomes. Mixed with fuchsia-coloured hibiscus leaves, the tea takes on a bright red colour.
